All about Maple
The French taught us about "terroir". This classically
proven French concept gave us the idea to create pure maple syrup applying the
same concept under the brand, Maple Terroir. The location, soil and climate of
a given maple farm site directly affect the flavor, characteristics and overall
quality of the pure maple syrup produced from that maple farm.
with this knowledge, we found that the maple trees on this maple farm
produces consistant flavor and clarity. Low-yield farming on high elevation
terrain takes a tremendous commitment in terms of time and cost. But anything
else would require compromise, which we are not willing to make.
Terroir Fine Maple Products is produced from a 4th generation maple farm located near the
beautiful Appalachian Mountains,is with some of the best
producing sugar maples in Canada.
Attached to the evaporation plant is a highly "state of the art"
production and packaging plant with bottling production lines that include
automated filling, capping and labeling which transforms the syrup into
numerous unique products.
Quality control is of the utmost importance in our production.The factory is
certified by Agriculture Canada and has implement a Hazard
Analysis & Critical Control Points (HACCP) system to assure food
quality and safety management. Critical Control Points are monitored in each
step of the product flow that may affect food safety and quality.
The HACCP system encompasses farm to consumer procedures for safe food handling and preparation in the factory. Every drop of Syrup that is to be used in our products is first government inspected and if it passes all requirements is then re-inspected by are staff to assure it can meet our high standards. On average only 70% of the government inspected syrup will qualify to standards and by used in our products.
We maintain a quality system within our facility, which includes proper cleanliness and food-safety procedures. We also have a comprehensive system in place that checks the quality of all syrup we use as well as the equipment that is used with the products. In addition to conducting regular visual inspections to confirming physical measurements and performing analyses of the products. Nowhere within our pure maple syrup process do we blend or add chemicals or bleaching powders or color preservatives of any kind. By offering pure unaltered products produced with 100% pure maple syrup.
Through out the years, the quality and workmanship has been recognized with awards in both finish products and production methods. The maple farm has been awarded the sugar bush management award for 2 straight years as well as gold and silver medals for pure maple syrup and finish products.
